They look good Billy.
I would move the coals over to one side and cook the ribs on the other side with the lid down.
Unless of course you like them cooked like that. I tend to like a bit of blackness on them. Makes them taste better.
 
Went nuts cooking pizzas in the kamado today.
Been a long time since I cooked any and I made about 8-9 of them.
All pizza'd out now and looking forward to breakfast and lunch tomorrow. :)

Yrh, it does taste excellent, but me mate was telling me after surgery for gut cancer that all those black bits are cancer causing.

Nice yabbies Billy Got a few while I was away over the past couple of days and bought them home to make yabbie pate. It will be a first time event so will let you know how I go.
But in the meantime well tonight I cooked,......BUGGER ALL!

First attempt at pate was terrible, so added a can of smoked salmon then all good,
 
Tonight's effort was crumbed pork cutlets with brussels sprouts.

Beat out the cutlets, and seasoned with toasted and ground white pepper, fennel seeds and salt, for a few hours. That's my go to seasoning for pork. Cutlets were then crumbed in the usual way, using 50/50 crumbs and panko crumbs.

Quartered and lightly blanched the sprouts, and cooled, drained and dried them. While the cutlets were cooking slowly in lard and butter, I sauteed the sprouts in lard until they started to colour. They were finished with crispy bacon strips and sauteed French shallots, and on a whim a handful of drained and chopped sauerkraut which added a salty and vinegary savory note. Finally tossed through some toasted pine nuts.

The combination was pretty delicious, and looked better on the plate than in the pic.

We had our own garden beans(steamed) with pork(cooked in the oven) and rice with my first go at sweet chillie gravy(not hot,... and way too gluggy). :eek:
The beans were beyond compare. :D
And the pork wasn't half bad either. ;)
