Traditional fish dish for Good Friday.

A simple fish pie that you can change ingredients to suit yourself.

Leek, (or onion).
Celery. Shops had none so not tonight.
Carrot,
Garlic.
peas,(added corn tonight just because I saw it as I grabbed the peas)
White sauce. ( packet or make your own)
Potatoes, mashed
Grated cheese
Seafood. This started out as just a simple white fish pie but now we add whatever we feel like. Tonight I just grabbed what ever we had in the freezer. Barra and salmon fillets, calamari and prawns.

Gently cook off the Leek, carrot, celery and garlic. At the last minute add frozen peas.
Salt n pepper of course.
Spread in a baking dish, add the seafood and white sauce. Mix it all together.
Add mashed spuds and shredded cheese.

Into the oven at 180 for about 40 minutes.

Proud dad moment.
Our youngest girl, Kiera, has recently completed her apprenticeship as a chef. Her final exam was to plan a menu, prep and cook all the food. It was outstanding.

Cooked up a butterflied lamb leg tonight
I marinate it in a spiced Greek yogurt for the day then cooked it indirectly in the bbq until the internal reached 60deg.
I then built up the fire and finished it off directly over the flames to get some colour.

We had a salad on the side but no one wants to see salad

It was my first go at marinating with greek yoghurt. It was bloody delicious but I think I can tweak the recipe a little bit and knock it up a notch.

:) :) Hey Hip, the reference was to the absolutely delicious looking pork rib and mushroom ramen you made and little while back.
That to me is the most perfectly delicious food.
The yoghurt marinated lamb does look as tasty as two tasty things put together too. :D
