Boned and rolled lamb loin seasoned with truffle mustard and rosemary and black garlic powder.
Sauce of white wine, beetroot, lamb glac de viande and plum vinegar. Bit of the black garlic and rosemary powder and black pepper. Roast hassle back potato and sweet potato, as well as minted peas with crispy Serrano ham on the side.

Bit complicated for a week night , but I got home at 5:30 and served it up at 7:15.

Thought I better have a go....

Smoked some pork belly over Banksia.

After slicing and dicing into tasty cubes, I gave them them a roll around in some olive oil, "sweet rub o' mine" and cayenne pepper.

Salted the skin (removed previously) and put them on the rack for 3 hours.

They looked good enough to eat at this stage, but I only ate one and went to the next stage.

Mixed up some spicy bbq sauce and gave them a bath with a few bits of butter for another 90 minutes.

Uncovered for 30 or so minutes and hit the skin with the blow torch ]:D

Was a tasty, albeit unhealthy Friday night snack :D
 
Been a long while since ive posted on the forum but i thought id share a meal we enjoyed last weekend with some family and friends
Using an old secret recipe the beasty was marinated and wrapped overnight to soak in the flavours

Its gotta be one of the best things when they let you light a fire and cook meat

It never made it off the spit !!!

Best part was sitting around the fire with a few mates and a few drinks picking what meat was left on the bones.

Fantastic, had a lamb on a spit with mates once, threw the carcass over the back fence of a mates for his shepherd and mongrel, the shepherd was walking funny for a couple of days and didn't eat another thing, he gorged the bloody lot.
