Two hams, brined for 10 days and getting hot smoked.
In the meantime, waiting for the second rise of the dough to make pizzas in the Kamado. It's going to be a good day.

Hey RJ. I had one of these a few years ago and one day when I had it stuffed into the middle of a stack of charcoal it popped and died. Then, that was the end of it.
Not long after that I got the Aldi heat gun, thrashed it for the last two years and it is still going strong. Thoroughly recommend them if they come up again.

Yes use it alot. Not great on heatbeads but brilliant on wood and charcoal. :Y:
 
crispy skin salmon again . i dead set love this stuff .shame the wife does not like almost all seafood . i did get her to eat some tonight she ate her vegies and about half her salmon but then admitted defeat she just cant eat it shame realy it would do her the world of good if she could eat it . but not to be i went to a lot of effort and got it just right too seared in the cast iron pan then finished in the oven came out bloody lovely .

Something a bit different for me. My usual method for smoking foods in outside in a Weber or smoker. You know.... Man style. :D
Well I picked up a smoking gun from Aldi. Put a couple of salmon fillets in a bowl, covered with cling wrap. Filled it with smoke and let sit for a while. A simple pan fry and it came out very nice. The smoke flavour was there but subtle. Definitely will be using it more. Sorry... no "after" pics. I forgot. :8
