If you dont like too much salt as a preservative, vacume seal it in snack size, and freeze.
Doing it in bulk makes it easier to use different flavours for the fuss.
Teriyaki marinade is a good sweet tacky sauce.
Chilli flakes are good to use, I chuck a whole bottle of the Nandos "extra bloody hot" label in with mine.
