Hopefully this is more to your liking?

Just a fresh bought chook from the supermarket but turned it into something special.

Brined for 5 hours and air dried in the fridge for about 20 hours.

Sprayed some veges with olive oil and sat the bird on its throne with some melted butter, cracked pepper and Chinese 5 spice rubbed on.

A bit of hickory smoke and about 3 1/2 hours later it was done.

No photo's of it before it hit the plate as when I was removing it from its stand it literally fell to bits.

Nearly forgot to take a picture of it on the plate as well.

Its only the second chook Ive ever cooked but reckon it won't be the last.

Hey Silver ....after quite a few hours of trial and error. ...I think I may have come close to working out your secret recipe....Obviously i need to tweek it a little more...but i think i have nearly worked it out

Yes Heatho..i know theres 11 secret heabs and spices... but i could only find 8 that i could recognize in silvers photo..And yes Silver...i think it might need a bit longer in the oven...But im not quiting...i will discover your secret family recipe. ..
