I don't have any pics of this, but it's great winter dish, and cheap as chips too :Y:
Feeds about 5 or 6 people
500grams red beans
1 big smoked ham hock
2 litres of water
500 grams Italian sausages
2 or 3 pods of garlic ( mashed/crushed)
2 onions chopped
3 stalks of celery chopped
2 bay leaves
salt and pepper to taste
1 teaspoon cumin
In a large pot put in every thing except the sausage and garlic and turn on the heat.
In a frying pan saute the sausage and garlic untill nicely browned all over, then slice and add to the pot.
Bring it all to a boil then turn down to a very low, slow simmer, stir occasionally. Keep the mixture nice and moist but not like soup.
After about 3 hours remove the hock from the pot, remove the skin and give that to the dog.
Remove all the meat and gristle from the hock bone and put it back in the pot, the meat, not the bone, and cook for another hour or 2
Scoop out about a mug full of the bean mix and mash it up and stir it back through the mix in the pot.You should be able to eat it from a fork with some of the liquid running through.
Cook some rice, enough for the number of mouths that you're going to feed.
Pile rice on the plate of the free loaders and serve up the beans mix on top.
About 5 hours later you can have a farting competition
