Yep RJ,

It is the classic way to cook petit pois (basically baby peas), in butter with french shallots and lettuce and a little stock. A few years ago pea sauce or smashed peas became a popular sauce for fish and scallops, and I'm sure it went well with the scallops. The restaurant sounds good to me.

well played Goldandsand! more than I thought for sure..old Ramjet must have sure stuffed them in- a bit like his dinner(s) by the sound of it! :p
