How to make beef jerky / recipe

this is how i make my beef jerky these are not my recipes but i have altered them for my taste

i call this one (burn ya twice)

2 large pieces of steak
2/3 cup Worcestershire sauce
2/3 cup soy sauce
1 tablespoon honey (or 1 tb spoon of brown sugar)
2 teaspoons freshly ground black pepper
1 teaspoons onion powder
2 teaspoons of garlic powder
1 teaspoon red pepper flakes
1 large zip-lock bag
if you like you jerky hot add

2 teaspoons cayenne pepper (extra hot )

add 12 birds eye chillies (freeze them first so the skin is easy to come off. and once defrosted squeeze the small end of the chilli the pulp and seeds will come out)

its better to stick the meat in the freezer for 1 to 2 hours in order to firm up (its easier to cut ) and then cut the meat about 2-3 mm thick (make sure you get all of the fat off the meat)

i marinate them over night in a zip lock bag with no air in it

i throw them in my dehydrator i got of ebay for cheap here is the link

ive had a few but i think this is the best one that i have bought

leave in the dehydrator for minimum 4 hrs and then check every hour once done it should be dry but pliable

i always do come beef jerky the night before i go out detecting so Ive got something to chew on.

if anyone has anymore recipes please feel free to add them :)
 
ohh and i forgot dont buy the cheap Worcestershire sauce or soy sauce as there to salty buy some decent sauces as you wont be disappointed
 
You are a star. best detecting food ever and a great survival food. The good stuff costs a lot more to buy so a great money saver. Thanks mate!

I dry mine in a smoker. Love he smoke flavor.

Crikey Rod!!! That's a cracker of a smoker. You sluicing and panning boys have all the good kit. I suppose at a pinch you could use the trays as classifiers? :)
 
Thank you very much for this topic. I love jerky (especially with an ice cold beer) but have never tried making my own, I think that's all about to change :lol:
 
The "burn ya twice" receipt is a little concerning though, what will I use for the other end lol
 
lol doesn't matter it all feels like sand paper after its gone through ya lol

Smoked food one of my favorites. I'll bring a batch of jerky when we meet up.
It doesn't have to burn... Use less chilli ;)
For those using dehydrators you can buy 'liquid smoke' to add to your marinade.
Not as good as real smoke but adds that element.

That's only a toy smoker. A BBQ forum I'm on they have trailer mounted monsters.
Think small fuel truck 8)
 
I'm looking forward to trying it Ramjet. Was it you that posted the info on building a home made smoker? I can't seem to find it.
 
No wasn't me. I use 2 webers and kids bought me the cabinet one.
You can smoke food and make jerky in a hooded bbq.
Oh... The cold smoker I made? That's in the 'today I cooked' thread :)
 
Ah OK, that must have been the one I was thinking of. What wonderful things can you do with the cold smoker?
 
Cold smoke cheese, eggs, fish, nuts....
Or you can use it as the smoke source in hot smoking.
Eg. A gas smoker. Use the cold smoker to add smoke.
As with all research check YouTube.
For jerky you really don't need heat, just a flow of dry air. Low temp.
The smoke also has a drying effect.

I have today started on my Venturi smoker using a piece of aluminium tubing 50 x 75 x 350mm for the firebox with a 1/2 inch copper tubing smoke transfer pipe about 300mm long with a T piece at 150 mm containing the 3mm air pipe which will connect to an Aquarium pump in due course.
I haven't thought about a smoking box at this stage, but thinking about using plywood or something out of aluminum as I have half a sheet left over from my Wal banker inspired sluice.
I'm looking forward to some home cured Bacon ,ham & jerky.
Wondering how she oak goes as a smoking timber.?
