    Today I COOKED.

A friend went fishing yesterday and gave me this magnificent snapper, just over a kilo. He had another that was at least twice the size. I simply seasoned it with salt and and pepper, lemon, some garlic, dill and home made fermented chilli sauce. Cooked over charcoal. Last pic shows that you...

    TIM TSZYU VS JEFF HORN

Tim looks a lot like his dad, and fights like him too. He handed out a boxing lesson and easily overcame Jeff's aggressive bullocking style. Very impressive, looks like a future world champ.

    Today I COOKED.

Getting the hang of my new charcoal grill/smoker. Grilled and smoked lamb shank. Seasoned the shanks well with a home brew rub. No sugar as I am diabetic. Lit a bed of apple wood briquettes on the bottom grate with some lump charcoal poured from the chimney. Brought it to 150c (roughly 300f)...

    Jean Paul Turcaud

those who have been around the forums for a long time would remember this bloke. Somehow years ago he got hold of one of my email addresses and for a while sent me crazy emails. https://www.abc.net.au/news/2020-08-20/pilbara-gold-prospecting-pioneer-jean-paul-turcaud-dies/12575010#desktop

    Today I COOKED.

First cook on the new Weber Summit charcoal, essentially a Kamodo with dual wall steel insulation instead of ceramic. Reverse sear ribeye on the bone. Seasoned the steak with a home brew rub. Meat comes from a local butcher who raises his own beef. One basket of lump charcoal and brought the...

    Today I BOUGHT

Lining up the ducks before I retire in March and while we still have two incomes. Anyone who follows the cooking thread will know I like rattling the pots and pans. I've recently become interested in charcoal cooking, both hot grilling and low and slow american BBQ and other low temp charcoal...

Saw this morning that the bridge has opened, with speed restrictions and dirt road on the approaches.

    40 years on the job.

Congratulations, RJ. I'm 62 and will be stopping work on 5 March next year. Then I will use up all my annual leave and remaining extended leave before officially retiring at the end of June. I have a defined benefit super (no pension option, though) and it is in my interest to get all my points...

    Minelab Equinox 800 vs 600

Good luck with the 600, Greg. I'd like to have a detect with you one day so that we could compare the 600 and the Multi Kruzer over a few targets.

Shoalhaven River height at Oallen Ford NSW

Just saw these pics of the aftermath of the flood over the bridge. Looks like significant damage to the approaches, and it could be a while before the bridge is re-opened.

Shoalhaven River height at Oallen Ford NSW

Dave, I'm in Sydney this weekend, and am about to head home. I believe Goulburn has had around 110 ml since Friday. Lots of roads are closed to the south, and I've heard that Canberra is isolated, too.

Shoalhaven River height at Oallen Ford NSW

Just heard from Bazza that the bridge is officially submerged. It was designed for a 100 year flood, i believe.

Shoalhaven River height at Oallen Ford NSW

just saw this picture on Farcebook. You can see the new bridge (in the background) about to go under the flood waters. It will be interesting to see impact of the flood on the various gravel bars around the Ford.

    Today I COOKED.

A friend gave me some Tasmanian truffle, so I made a classic pasta alla Gricia with truffle. Very simple, guanciale (cured pig cheek - more fat than meat but just delicious) and pasta with a sauce of the pasta water, fat from the guanciale and pecarino cheese. Kind of the ancestor of macaroni...
